While working, I trained at Tokishige Kasukahonten and saved money while waiting for the right moment. On November 10, 2018, I opened the shop on my birthday. PR: Soju is an old-established Chinese restaurant in Jitsumyo. Despite being located in a residential area, the second-generation owner continues to uphold the taste of the previous generation. In addition to the nostalgic taste of the original Soju ramen, they are proud of their rich soy sauce ramen. The soup is made by carefully extracting the flavors of selected pork bones, chicken carcasses, and pork trotters for an extended period.
The original Soju ramen is a classic ramen dish with an abundance of ingredients, including chashu, naruto (fish cake), menma (bamboo shoots), spinach, green onions, and a half-boiled egg.
